Bei einem pH-Wert von 4,1 bis 4,6 treffen <strong>Clostridium pasteurianum<\/strong> und <strong>Bacillus coagulans<\/strong> aufeinander \u2013 und der \u201est\u00e4rkere\u201c Organismus entscheidet \u00fcber die Prozessgestaltung.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">W\u00e4hrend der D90-Wert von Clostridium pasteurianum nur 1,6 Minuten betr\u00e4gt, zeigt sich Bacillus coagulans deutlich widerstandsf\u00e4higer gegen\u00fcber Hitze. In der Qualit\u00e4tssicherung lautet daher die goldene Regel: Prozesse werden nach dem robustesten Mikroorganismus ausgelegt!
