Bereits minimale Abweichungen \u2013 etwa ein Wert von 4,55 statt 4,50 \u2013 k\u00f6nnen dazu f\u00fchren, dass sich gef\u00e4hrliche Bakterien wie Clostridien vermehren. Diese Erkenntnis f\u00fchrt Max zu einer zentralen Regel der Qualit\u00e4tssicherung: der Drei-Punkt-Kalibrierung.
