Max zeigt, was hinter dem sogenannten &#8222;Flat Sour&#8220;-Ph\u00e4nomen steckt. Verantwortlich ist das Bakterium <em>Bacillus coagulans<\/em>, das Zucker verstoffwechselt, ohne Gas zu produzieren.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Obwohl die Verpackung \u00e4u\u00dferlich unver\u00e4ndert bleibt, sinkt der pH-Wert auf bis zu 4,2 und das Produkt wird ungenie\u00dfbar. Besonders bei 50\u201355 \u00b0C entwickelt sich dieser Verderb in nur 5 bis 7 Tagen.
